On August 26, Comfort Kitchen is joining more than 100 restaurants across 13 countries for the first global Paga Lo Que Puedas / Pay What You Can Day, a day centered around a simple idea: opening our doors, serving the food we believe in, and inviting guests to pay what they can.

For one day, our food menu will be offered on a Pay What You Can basis. Guests can order what they want and decide what they want to pay at the end of their meal.

Same kitchen. Same food. Same hospitality. A different way of sharing it.



Where Paga Lo Que Puedas Began

The global initiative grew from years of practice at Masala y Maíz, the acclaimed Mexico City restaurant founded by chefs Norma Listman and Saqib Keval.

Since 2020, Masala y Maíz has held Pay What You Can days as a way of making the restaurant accessible to people who might not otherwise be able to experience it. Rather than creating a discounted menu or a separate experience, guests receive the same food and hospitality while deciding for themselves what they are able to contribute.

That distinction matters.

Pay What You Can isn't about compromising the experience. It's about asking what happens when hospitality begins with trust.

After years of practicing the model in their own restaurant, Masala y Maíz is inviting restaurants around the world to participate together for the first time on August 26, creating a shared global day of hospitality.

Why We're Participating

At Comfort Kitchen, we've always believed restaurants can be more than places to eat.

They can be gathering spaces. Places where cultures and stories meet. We also recognize that restaurants—especially as the cost of dining out continues to rise—aren't always equally accessible to everyone.

That tension exists throughout our industry: How do we build sustainable restaurants that support our workers while also creating spaces that feel genuinely connected and accessible to the communities around us?

Paga Lo Que Puedas doesn't pretend to solve that question in a single day. Instead, it gives us an opportunity to explore it together.

For one service, price becomes flexible, while the experience remains the same.
